Impending Deliciousness

Summer is here, and it’s a great time for food. Fresh fruit! Iced tea! I’ve got so many things I want to cook.

  2. Mushroom and smoked tofu risotto!

    Onion
    Chives
    Basil
    Parsley
    Risotto rice
    Vegetable stock/boullion
    Simmering water
    Firm smoked tofu
    Shiitake or oyster mushrooms
    2 cloves of garlic

    Chop and fry your onions in oil. Add the garlic. Add the rice. Add the stock. Keep adding the water bit by bit, allowing the water to simmer. Add the herbs.

    Chop then fry the tofu in another pan until crispy. Add to the mix. Chop and fry the mushrooms. When it’s ready, enjoy.

    Serve with olive bread and home-made mint lemonade!
