Ranchero

I tried out Vegan Express’ tofu ranchero. A poor choice of salsa on my part left the sauce a bit chunky, and it doesn’t hold a candle to a real ranchero sauce, but the end product was savory, spicy, and infinitely comforting. I used to love huevos ranchero before Veganization, and this tickled me in the right place.

Looking at this picture and others, I seem to be infatuated with sprinkling cilantro on my food:

  1. I love this dish – I am not an egg fan so it is tofu egg dishes for me at all times. I put tons of cilantro on Mexican and Thai food. I am addicted to it. I also put it in my vegetable juice!
