Simple Pasta Arrabiatta

Last night’s dinner was pasta arrabiatta with a spinach salad. Here’s the recipe I used:
Simple Pasta Arrabiatta
Serves 4

Ingredients:

  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 28oz can of diced tomatoes
  • 1/2 tsp ground pepper
  • 1-2 tsp. red pepper flakes
  • 1/2 tsp salt
  • 1 lb pasta
  • parsley for garnish

Directions:

  1. Heat the oil in a medium saucepan, and saute the garlic over medium-high heat for about 6 minutes, or until golden
  2. Add the tomatoes (with juice), salt, pepper, and the pepper flakes. Reduce the heat to medium-low and continue cooking until tomatoes are soft and the sauce is thick, about 15-20 minutes. Stir occasionally.
  3. Remove from heat, check for taste add more salt if needed.
  4. Cook the pasta according to the instructions on the box.
  5. Drain the pasta and put into large serving bowl. Pour the sauce in, and mix everything together.
  6. Serve right away, garnished with chopped celery.

  3. thank you for sharing yr wonderfully simple pasta sauce recipe. i tend to go over board with my sauces adding red wine and too many dried or fresh herbs. while my sauces are good, sometimes i crave simple flavors and this looks PERFECT!
