Enchiladas
Can vegan enchiladas be delicious? Damn straight they can! Tonight’s were stuffed with black beans, onions, carrots, and ground “beef.” Covered with sauce and vegan cheese. I made a double batch so there’s plenty of leftovers.
- Mo: That looks and sounds delicious! I had to go ahead and add that cookbook to my wishlist!

Ariell, The cheese is For Your Health Vegan Gourmet Cheddar. Like all vegan cheeses it has its problems, but it worked really well in this recipe.
I love enchiladas too. I grew up eating them at least once a week.

fantastic-looking enchiladas! have you ever tried the VeganRella® brand of vegan ‘cheese’? Its taste and (perhaps more importantly) melting capabilities are incredible.

I’ll keep my eye out for it, VeggieGirl. They don’t have it at the grocery stores near my house, but it sounds like it’s well worth going out of my way for!

haha, well I have to go out of my way for it too, actually, because it’s only sold at one of the health food stores in my area (and that store is an hour away from my house!) – it’s unfortunately not sold at my local Whole Foods. I’ll be posting about it on my blog sometime later this week or over the weekend
