‘Za and ‘Cakes
Last night’s dinner was pizza topped with the Vegan with a Vengeance pizza sauce, fresh and sweet tomatoes, basil, and roasted garlic. The crust came out super thin, and the result was amazingly good.

Also on the weekend menu were vegan chocolate mousse cupcakes, with vanilla buttercream frosting, topped with sliced strawberry. These things were ridiculously rich.
I’m presently agonizing over dinner, as I have nothing planned. Eating so well most of the time has entirely spoiled me for the nights I don’t.

I just found your blog thanks to your incredible recent taco post on PPK, and oh my god, those cupcakes. Please, please, please point me to this recipe–my birthday is next week, I’m being forced to make my own cake, and these look absolutely perfect.

if you have Vegan Cupcakes Take Over The World, you have everything you need to make these. First make the Basic Chocolate Cupcakes and let them cool for a few hours. While they’re cooling, whip up the Chocolate Mousse Topping and refrigerate it. Then cut the tops of the cupcakes and dig a well inside with a spoon. Pipe the mousse inside the well and along the top of the cupcake, and replace the top.
After that, you can frost it and and the strawberries. These used the VCTOTW Vanilla Buttercream Frosting.
